Ala Pilaf with Tomatoes and Parsley Recipe

Ala Pilaf with Tomatoes and Parsley Recipe - 6 servings


2 1/2 cups Chicken Stock

1/2 medium white onion, chopped

1 cup uncooked ala cracked wheat bulgur

1 teaspoon fresh lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1 large ripe tomato, diced

1/2 cup coarsely chopped fresh parsley


In a heavy skillet, heat 1/2 cup of stock. Add onion and sauté 5 minutes. Stir in ala. Cook, stirring 5 minutes, or until ala is browned. Add remaining stock. Cover and simmer 15 minutes, or until liquid is absorbed and ala is tender. Just before serving, stir in lemon juice, seasonings, tomato and parsley.
