Stuffed Mushroom Recipe - 28 mushrooms


1 pound large fresh mushrooms

1/2 cup oil-free Italian dressing

1 bunch fresh spinach leaves, about 3 cups

2 teaspoons light mayonnaise

2 tablespoons grated onion

1 tablespoon lemon juice

6 ounces crabmeat

1/4 cup (1 ounce) grated reduced-fat cheddar cheese


Clean and stem mushrooms. Marinate in dressing for 1 hour, drain. Wash spinach leaves, shake but do not dry. Cook covered in a heavy skillet for 2 to 3 minutes, or until spinach is wilted. Drain, squeeze out excess moisture, and chop. Combine mayonnaise, onion, and lemon juice. Toss with crab and spinach. Stuff mushrooms, sprinkle with cheese. Bake at 375oF for 15 minutes.
