Steamed Clams Bordelaise Recipe - 4 servingsIngredients: 2 dozen clams 1 tablespoon olive oil 1/4 cup dry white wine 1 small onion, chopped 2 garlic cloves, minced 1 celery stalk, chopped Fresh parsley Fresh lemon wedges for garnish |

Method: Scrub clams and soak in salt water or cornmeal in water to remove sand. Rinse thoroughly. Place clams in a steamer. Add olive oil, wine, onion, garlic and celery. Cover and bring to a boil. Reduce heat, simmer 10 minutes, or just until shells open. Drain.
Arrange on a bed of fresh parsley. Garnish with lemon wedges. |
