Little Red Potato Appetizers  Recipe - 10 servings


10 bite-sized red potatoes

1/4 cup nonfat cream cheese

1/4 cup nonfat sour cream

3 green onions with tops, finely chopped

2 tablespoons grated nonfat cheddar cheese

2 tablespoons Tomato Salsa, preferably homemade


Cut potatoes in half, microwave or steam until just tender. Cool. Using a grapefruit spoon, scoop out about one third of flesh from centre of each potato half (reserve for another use). Combine cream cheese with sour cream. Add green onions. Just before serving, place about 1 teaspoon of cream cheese mixture in centre of each potato. Dot half the potatoes with cheese and the other half with salsa. Arrange on a round serving tray. Serve cold or at room temperature.
