Oysters Rockefeller Recipe

Oysters Rockefeller Recipe - 6 servings


12 cups trimmed fresh spinach

2 tablespoons dry bread crumbs

2 teaspoons olive oil

1 tablespoon grated onion

1/2 teaspoon chervil (optional)

1/2 teaspoon salt

1 fresh tarragon sprig

1/8 teaspoon pepper

2-3 drops Tabasco sauce

30 extra-small oysters

1/2 cup grated part-skin mozzarella cheese


Steam spinach 2-3 minutes, squeeze dry and chop. Combine bread crumbs, olive oil, onion and seasonings, toss with spinach. Divide well-drained oysters into 6-inch ramekins and broil or grill 5-7 minutes, or until very hot. Drain excess liquid.


Top oysters with spinach mixture, broil 3-4 minutes. Sprinkle with cheese, broil 2-3 minutes longer, or until cheese is melted and mixture is piping hot.
