Marinated Mushrooms Recipe

Marinated Mushrooms Recipe - 28 mushrooms

Ingredients:

1 pound fresh mushrooms

Juice of 1 lemon

1 cup oil-free dressing

2 garlic cloves

1 bunch fresh parsley for garnish

1 lemon, cut into thin rounds

Method:

Clean and stem mushrooms. Place in a large saucepan, and toss with lemon juice. Add dressing and garlic. Cook over medium-high heat for 20 to 30 minutes, stirring frequently. Remove from heat, cool to room temperature. Drain. *Chill.

 

Cover a serving plate with fresh parsley, top with lemon rounds. Spoon mushrooms over lemons.

 

Note : Marinated mushrooms will keep several days in the refrigerator.

 

* Remaining liquid may be used a marinate for another batch of mushrooms. It also works well as a marinade for artichoke hearts, or as a salad dressing.
