Mini Cheese Burritos Recipe - 4 servingsIngredients: 4 6-inch corn tortillas 1/3 cup grated reduced-fat cheddar cheese 2 tablespoons chopped green chilies 2 tablespoons finely chopped tomato 2 tablespoons finely chopped onion 1/4 cup tomato salsa, preferably homemade 1/4 cup nonfat sour cream |

Method: Lay tortillas flat. Sprinkle with cheese, chilies, tomato and onion. Roll each into a tight roll. Heat at 350oF for 5 to 6 minutes. Serve with salsa and sour cream. |
