Bruschetta Recipe |

Bruschetta Recipe - 16 servings (1 slice bread with 1/4 cup tomato mixture)Ingredients: 1 pound fresh, ripe plum tomatoes, chopped 3 garlic cloves, finely chopped 2 tablespoons olive oil 1 loaf Italian, Tuscan, or peasant bread 16 kalamata olives, pitted and chopped 1/4 cup chopped fresh basil 2 tablespoons chopped fresh Italian parsley |

Method: Combine tomatoes, garlic, and olive oil. Let stand at room temperature for 1 hour. Meanwhile, slice bread into approximately 16 half-inch slices. Toast under a preheated broiler or in a toaster oven for 2 to 3 minutes, or until brown on both sides. Just before serving, add olives, basil, and parsley to tomato mixture. Spoon mixture into a medium-size bowl and place in center of a basket or serving tray. Ring with toasted bread. Variation: Lightly spread bread with Garlic Olive Oil before or after toasting. Pour some oil into a spray bottle and spray it on the bread. (Spraying allows a lot of flavor while using a very small amount of oil). Serving Suggestion: Bruschetta works well as an appetizer or first course, especially with pasta, and is great on a picnic with roast or grilled chicken. |
